Strawberry Pound Cup Cakes

Enjoy this tasty treat using freeze-dried strawberries and butter powder.

Ingredients

1½ cups of flour

1 teaspoon baking powder

½ teaspoon salt

1 stick butter (melted) or 1/2 cup butter powder

1½ cups sugar

½ cup whole milk

3 eggs

1 cup freeze-dried strawberries

Instructions

Heat oven to 350 degrees

Blend 1 cup freeze-dried strawberries in a high-speed blender, food processor, or spice grinder until a fine dust forms.

In a small bowl, combine flour, baking powder, and salt.

In a large bowl, mix butter powder with 3 teaspoons of water until smooth, add sugar and stir. Add eggs one at a time and blend well.

Alternate blending in flour mixture and milk to the sugar mixture. Mix until combined.

Fold in freeze-dried strawberries.

Put cupcake liners in a cupcake pan and fill with cupcake batter.

Bake for 20 minutes.

Decorate with whipped cream and garnish with freeze-dried bananas, blueberries, and strawberries if desired.
