These cookies combine the tartness of the freeze dried raspberries with the
sweetness of the white chocolate. Perfect combination for a satisfying treat.
Cook: 20 min • Difficulty: Easy

1 cup Butter Powder, reconstituted with 3 T. water
3/4 cup sugar
3/4 cup brown sugar
1 tsp. vanilla
1/2 tsp. almond extract
1 egg
1 egg yolk
2 1/4 cup flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cups white chocolate chips
1 cup Freeze-Dried Raspberries
Mix butter and both sugars until creamy.
Add eggs and extracts.
Combine flour, baking powder, baking soda, and salt in a bowl.
Add flour mixture to sugar mixture and mix until blended.
Fold in white chocolate chips and raspberries.
Bake at 350 degrees for 10 minutes.
As soon as you take cookies out of oven, place a whole freeze dried raspberry into the center of
each cookie.
